Local Greens In Winter

I just got back from visiting C & S Hydro-Huts. Cheryl and Stewart Fry have just begun producing hot house greens from their Otis Orchards greenhouse. It is an impressive operation. Local greens in the winter have been a much talked about subject in local food circles for a long time. There have been so many times that this idea has not made it out of planning stages I am shocked at how (seemingly) simple this start up was. With a kit from CropKing the Fry's were able to get good sized operation going in just a matter of months. We expect to have some of their butter lettuce in my this weekend.

  6. I tried it last night and it was good. I am not a big fan of butter lettuce and so I am excited to see what other greens they will be selling. btw - I enjoy your blog.

    If you rinse it, then place it in a plastic bag in the frig for a while...it will get crunchy and oh, so sweet. Chilling it after you rinse it, gives it so much more body and crunch...amazing- I am addicted!
